DANDELIONS!

Yup you read it right. They will soon be taking over the yard. As a kid I loved to pick them and give them to my mom I thought they were pretty yellow flowers. Did you realize those aggravating weeds that spread like wild fire are one of the most nutritious greens you can eat? With easy access too. Walk out the front door and pick them for free! Dandelion Greens are low on the Glycemic index, low in calories, high in fiber, Vitamin A, C, E, and K. They even have anti-inflammatory properties. I’m loving that! To prepare them just pull, rinse, chop, and toss into your salad. They do have a bitter taste so you’ll want to mix in other greens and veggies. Dandelion greens get a A+ and are at the top of the list for Spring Super Foods!

FENNEL: This spring vegetable/herb packs a lot of nutrition. It’s a 2 on the glycemic index (low!), great source of carbs for the body to convert to energy, low in calories, high in fiber, vitamin C, Folate, potassium, and magnesium. Fennel can help you to lose weight by breaking down fat in the body! The entire vegetable bulb, stalks, and leave/seeds are edible. You can eat it raw it has a delicious licorice taste, put it in salads, soups, or roast it. Fennel can also help medicinally. It helps to relieve diarrhea, constipation, flatulence, indigestion, anemia, and respiratory disorders. It’s great in tea and for nursing moms to drink to promote lactation. You can grow it in a pot in full sun. Fennel is a Spring Super Food to add to your clean eating list!

Spring Super Foods #1. Mint

Mint: It’s got next to no calories and it’s a great substitute for sugar. If your trying to lose belly fat sugar has to go try mint instead. It’s a great source of Vitamin A & C which means it’s a powerful antioxidant that can help blast away cancerous cells! It’s rich in minerals and has many medicinal properties too such as helping to relive indigestion, stress, colds and flues. Try adding this herb to your meal or even to your water to give it some extra flavor. Growing your own mint is really easy, but best done in a pot, because it’s a very aggressive plant and it will take over the yard. A great spring/summertime drink is a Mint Mojito Yum and you can make them skinny! Enjoy!
