You’ve seen many recipes for protein pancakes, but you’ve never seen one like this before. This is the most delicious protein pancake recipe for weight loss ever and their gluten free!
This recipe is really easy and quick to make. Each batch yields 2-3 servings. If you have a busy week ahead they freeze well. To make these delicious protein pancakes you’ll need:
1. 100% protein powder 1 scoop 20g
2. Steel cut oats 1/4 cup
3. Almond meal 1/3 cup (for the oats and almond meal I use Bob’s Red Mill brand)
4. Ground Flax seed 1 tbs
5. Unsweetened almond milk 1/3 – 1/2 cup
6. 1 large egg
7. Cinnamon 1 tsp
8. Baking powder 1 tsp
9. Coconut oil 1 tsp
Combine all ingredients into a bowl and mix well. I mixed my batter with a fork, but if you want to grind the ingredients into a finer meal then throw into a food processor or use an immersion blender. Heat the coconut oil on low in a frying pan and pour in the batter. When the pancake starts to bubble it’s ready to be flipped. Heat the other side about another minute and it’s done. To keep it healthy I like to spread pure honey atop or sometimes I prefer fresh or frozen fruit (depending on the season). If it’s a busy day I’ll just eat them plain in the car. These pancakes will keep you full till your next meal and give you the energy you need to get trough your morning.
Don’t be afraid to customize this recipe. If you don’t have protein powder, and you don’t want to purchase it then make it without. Or maybe you won’t want to use the almond meal. I highly recommend trying them like this though. It’s a real treat. They kind of taste like your eating a delicious warm waffle cone right off the waffle maker. It’s so good!
